Roasted Shrimp with Feta and Orzo

While the shrimp is cooking, chop the fresh herbs, and slice the cucumber. Now, combine the cooked shrimp with the orzo, and then add the dill, parsley, cucumber, onion, 1 teaspoon of salt, and 1 teaspoon of pepper. Toss all the ingredients thoroughly. Gently fold in the feta cheese.

Cook Orzo: Fill a large pot with water and mix in 3 tablespoons of kosher salt. Bring the water to a boil and then add the uncooked orzo. Cook it according to the package directions. Stir the pasta occasionally as the water simmers. When the pasta is al dente (9-12 minutes), drain it and set it in a large salad bowl.
